How to Store, Freeze & Reheat

These crisps are best served warm, right out of the oven, when the phyllo is at its crunchiest. Pair them with a simple Greek salad or a bowl of lemony hummus for a light meal. They also make fantastic party bites—just arrange them on a platter with some olives and tzatziki.

For storage, let any leftovers cool completely, then pop them in an airtight container in the fridge for up to 3 days. To reheat, place them on a baking sheet in a 350°F oven for 5-7 minutes—this revives the crispiness. You can also freeze unbaked crisps for up to a month; just bake them straight from the freezer, adding a few extra minutes.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the spinach, feta, ricotta, Parmesan, egg, garlic powder, oregano, salt, and pepper. Mix well.
  3. Lay one sheet of phyllo on a clean surface and brush lightly with melted butter. Top with another sheet and brush again. Repeat until you have 4 sheets stacked, then cut the stack into 4 long strips.
  4. Place a heaping tablespoon of filling at the bottom of each strip, then fold the dough over the filling in a triangle shape, continuing to fold like a flag until the strip is fully wrapped. Repeat with the remaining phyllo and filling.
  5. Place the crisps on the prepared baking sheet, brush the tops with remaining butter, and bake for 15-18 minutes, or until golden and crispy. Serve warm.

👩🍳 Chef Elena’s Kitchen Notes & Storage

Make sure the spinach is really dry—squeeze it in a clean kitchen towel to avoid soggy crisps. You can assemble these a day ahead and refrigerate unbaked; just add 2-3 minutes to the baking time. Store leftovers in an airtight container in the fridge for up to 3 days, and reheat in a 350°F oven for 5 minutes to bring back the crunch.
