How to Store, Freeze & Reheat

These bars are perfect for Mother’s Day brunch, a spring picnic, or just because. I love serving them slightly chilled with a drizzle of caramel sauce or a scoop of vanilla bean ice cream. They’re also great with fresh berries on the side for a pop of color and tartness.

Store leftovers in an airtight container in the fridge for up to 5 days—if they last that long! You can also freeze them for up to 3 months; just wrap each bar in plastic wrap and place in a freezer bag. Thaw in the fridge overnight, and they’ll taste just as fresh as the day you made them.

🍳 Step-by-Step Instructions

  1. Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, 1/4 cup sugar, and 2 teaspoons cinnamon. Press firmly into the bottom of the pan. Bake for 8 minutes, then set aside to cool slightly.
  3. In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla and sour cream, mixing until just combined. Gently fold in flour.
  4. Pour the cheesecake mixture over the crust. In a small bowl, combine 1/4 cup sugar and 1 teaspoon cinnamon, then sprinkle evenly over the top.
  5. Bake for 25-28 minutes, until the edges are set but the center is slightly jiggly. Cool completely, then refrigerate for at least 2 hours before slicing into bars.
  6. For extra churro crunch, broil the top for 1-2 minutes after baking, watching closely—then cool and chill.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For the cleanest slices, chill the bars overnight and use a sharp knife dipped in hot water, wiping between cuts. Store in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months—just thaw in the fridge overnight before serving.
