How to Store, Freeze & Reheat

These potatoes are incredibly versatile. I love serving them alongside roasted chicken, grilled steak, or even as part of a hearty breakfast with eggs. They also make a great addition to a holiday spread, sitting proudly next to green beans and stuffing. For a casual weeknight, just pair them with a simple green salad.

If you have leftovers, store them in an airtight container in the fridge for up to 4 days. To reheat, spread them on a baking sheet and warm them in a 400°F oven for about 10 minutes—this helps restore their crispiness. I wouldn’t recommend freezing them, as the texture will suffer. But honestly, they rarely last long enough to worry about that!

🍳 Step-by-Step Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, rosemary, lemon zest, salt, and pepper until well coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet, cut side down for maximum crispiness.
  4. Roast for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and fork-tender.
  5. Remove from the oven and immediately sprinkle with Parmesan cheese and fresh parsley. Toss gently to combine.
  6. Serve hot, straight from the baking sheet or transfer to a serving platter.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For extra crispiness, make sure the potatoes are completely dry before tossing with oil. You can also parboil them for 5 minutes before roasting to speed up cooking. Store leftovers in an airtight container in the fridge for up to 4 days; reheat in a 400°F oven for 10 minutes to bring back the crunch. These don't freeze well, so enjoy them fresh.
