How to Store, Freeze & Reheat

This casserole is fantastic right out of the oven, but it’s also a lunchbox superstar the next day. Serve it with a dollop of sour cream, fresh cilantro, and maybe some sliced avocado on the side. It’s a complete meal that needs nothing else.

For storage, keep leftovers in an airtight container in the fridge for up to 4 days. To reheat, pop it in the oven at 350°F for about 10 minutes to revive the crunch—microwaving works too, but the chips will soften. You can also freeze the assembled casserole before baking for up to 2 months; just thaw overnight and bake as directed.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a spoon. Drain any excess fat.
  3. Stir in the taco seasoning, black beans, and diced tomatoes with green chilies. Let it simmer for 3-4 minutes until the flavors meld.
  4. Spread half of the crushed corn chips in the bottom of the prepared dish. Top with half of the beef mixture, then half of the cheese. Repeat the layers once more.
  5. Bake for 20-25 minutes until bubbly and the cheese is melted and golden. Let it rest for 5 minutes, then dollop with sour cream and sprinkle with cilantro before serving.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For extra crunch, reserve a handful of crushed chips to sprinkle on top just before baking. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 2 months—reheat in the oven to keep the chips crisp.
