1. Why This Recipe Works Every Time
In my test kitchen, I’m always looking for ways to bring restaurant comfort home without fuss. Gnocchi Carbonara became my go-to when I want that rich, indulgent feeling of a Roman carbonara, but with a softer, more forgiving texture—gnocchi just soaks up that silky sauce like a dream.
The magic here is how the egg and cheese create a velvety coating that hugs every nook of the gnocchi, while the crispy pancetta adds a salty crunch. It’s simple, fast, and tastes like you spent hours—but honestly, it’s on the table in 30 minutes.

🍳 Step-by-Step Instructions
- Bring a large pot of salted water to a boil. Meanwhile, in a large skillet over medium heat, heat olive oil and cook pancetta until crispy, about 5-7 minutes. Remove with a slotted spoon and set aside, leaving the rendered fat in the skillet.
- In a small bowl, whisk together egg yolks, whole egg, Pecorino Romano, black pepper, and salt until smooth.
- Drop gnocchi into the boiling water. Cook until they float to the surface, about 2-3 minutes. Reserve 1/2 cup of pasta water, then drain the gnocchi.
- Reduce skillet heat to low. Add the drained gnocchi to the skillet with the pancetta fat, tossing to coat. Remove from heat and immediately pour the egg-cheese mixture over the gnocchi, stirring quickly. Add splashes of reserved pasta water, a little at a time, until the sauce turns creamy and clings to the gnocchi.
- Fold in the crispy pancetta. Serve immediately with extra Pecorino, black pepper, and parsley if desired.
👩🍳 Chef Elena’s Kitchen Notes & Storage
For the silkiest sauce, always take the skillet off the heat before adding the egg mixture—this prevents scrambling. Leftovers can be stored in an airtight container in the fridge for up to 3 days, but I recommend eating this fresh; if reheating, add a splash of water to bring back the creaminess.
