How to Store, Freeze & Reheat

These cookies are wonderful warm with a glass of cold milk, or you can sandwich them with cream cheese frosting for a real treat. They also make great lunchbox surprises the next day – if they last that long!

To store, keep them in an airtight container at room temperature for up to 4 days. You can also freeze the baked cookies for up to 3 months – just thaw on the counter for an hour. For longer freshness, freeze the unbaked dough balls and bake straight from frozen, adding a couple extra minutes.

🍳 Step-by-Step Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat butter and brown sugar until creamy. Add pumpkin, egg, and vanilla; beat until smooth.
  4. Gradually add dry ingredients to wet, mixing until just combined. Drop by rounded tablespoons onto prepared sheets.
  5. Bake for 10-12 minutes until edges are set and tops look slightly crackly. Cool on sheets for 5 minutes, then transfer to a wire rack.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For extra chewiness, chill the dough for 30 minutes before baking – it deepens the flavor and keeps the cookies from spreading too much. Store in an airtight container at room temperature for up to 4 days, or freeze baked cookies for up to 3 months.
