How to Store, Freeze & Reheat

This dish is best enjoyed right off the stove, when the sauce is at its silkiest. But if you have leftovers, store them in an airtight container in the fridge for up to 3 days. To reheat, add a tablespoon of water or milk and warm gently over low heat, stirring constantly—this brings back some of the creaminess.

For serving, I love a crisp green salad on the side to balance the richness. And if you’re packing it for lunch, keep the sauce a bit looser by adding extra pasta water before storing—it’ll reheat more beautifully.

Gnocchi Carbonara

Pillowy gnocchi tossed in a silky, egg-based carbonara sauce with crispy pancetta and a generous shower of Pecorino Romano. It's a cozy, one-pan twist on the classic that comes together in 30 minutes, making it a weeknight hero.

🍳 Step-by-Step Instructions

  1. Bring a large pot of salted water to a boil. Meanwhile, in a large skillet over medium heat, heat olive oil and cook pancetta until crispy, about 5-7 minutes. Remove with a slotted spoon and set aside, leaving the rendered fat in the skillet.
  2. In a small bowl, whisk together egg yolks, whole egg, Pecorino Romano, black pepper, and salt until smooth.
  3. Drop gnocchi into the boiling water. Cook until they float to the surface, about 2-3 minutes. Reserve 1/2 cup of pasta water, then drain the gnocchi.
  4. Reduce skillet heat to low. Add the drained gnocchi to the skillet with the pancetta fat, tossing to coat. Remove from heat and immediately pour the egg-cheese mixture over the gnocchi, stirring quickly. Add splashes of reserved pasta water, a little at a time, until the sauce turns creamy and clings to the gnocchi.
  5. Fold in the crispy pancetta. Serve immediately with extra Pecorino, black pepper, and parsley if desired.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For the silkiest sauce, always take the skillet off the heat before adding the egg mixture—this prevents scrambling. Leftovers can be stored in an airtight container in the fridge for up to 3 days, but I recommend eating this fresh; if reheating, add a splash of water to bring back the creaminess.
