How to Store, Freeze & Reheat

This dish is fantastic straight from the skillet, but leftovers are a gift. I like to serve it over a bed of fresh greens or with a crusty baguette to soak up every drop of that creamy sauce.

Store leftovers in a sealed container in the fridge for up to 3 days. To reheat, add a splash of broth or milk and warm gently on the stove so the sauce doesn’t break. You can also freeze it for up to 2 months—just thaw overnight and reheat slowly.

🍳 Step-by-Step Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned, about 6 minutes. Remove with a slotted spoon and set aside.
  2. In the same skillet, add onion and mushrooms. Sauté until soft and golden, about 5 minutes. Stir in garlic and cook for 1 minute more.
  3. Return beef to the skillet. Pour in beef broth and scrape up any browned bits. Bring to a simmer and let reduce slightly, about 3 minutes.
  4. Lower heat to medium-low. Stir in heavy cream and blue cheese, whisking until the cheese melts into a smooth sauce. Add thyme, salt, and pepper.
  5. Add cooked egg noodles and toss to coat everything evenly. Cook for 2–3 minutes until heated through. Serve hot with extra crumbled blue cheese on top if you like.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For a richer sauce, use full-fat cream and don't let it boil after adding the cheese. Leftovers keep in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months—just reheat gently with a splash of broth.
